The taste is smooth and never bitter and leaves a mild, lingering after-taste. It’s believed that the geographical area and the high quality of the waters in and around West Lake have a great deal to do with why the tea is so special. Indeed, the new menu places an emphasis on using Longjing tea from West Lake as the key ingredient. Our exquisitely crafted set menu includes the delicate foie gras mousse with green tea and avocado jelly, green tea bagel with goat cheese &and pine nuts, matcha eéclair, strawberry panna cotta with Longjing jJelly, mango Longjing tart, dark chocolate and Longjing truffle cake,. Oof course, no afternoon tea would be truly complete without the inclusion of a perfectly fluffy, special warm scone special with a Longjing flavour, dipped within cream and jam.
